L'Insolite is Yoshiaki and Kyoko's top Pinot Noir from Northburn station.

L'Insolite, meaning the unusual in French, is so named as it is a selection of Sato's best fruit from that vineyard which is then fermented as 100% whole bunch (the Northburn Station cuvée, for example, is all destemmed in 2021).

Vintage: 2021
Vineyard: Northburn Vineyard - lake side terrace facing west
Soil: Sandy, stony loam over river gravel with mineral rich schist and quartz
Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used
Harvest: Hand picked. 25 March 2021. 27 HL/Ha
Vinification: Natural yeast fermentation. 100% whole bunch. 23 days on skins. No additives except 15 mg/L sulphites before bottling
Maturation: 15 months in French oak barrels. No new oak. 
Bottling: 17 August 2022 without fining or filtration. 1185 bottles produced (just 4 barrels!)
