Soaked and pressed overnight with basket press. Natural yeast fermentation in old oak barrels. No additives except for 20 mg/L sulphites before bottling.

Maturation

14 months in old French oak barrels. 

Bottling

29 July 2022 without fining or filtration. 1458 bottles produced
