2019 Sato Sauvignon Blanc
The 2019 Sato Sauvignon Blanc is a new one, and one that won't be repeated.
With a tiny yield from the 2019 vintage and their Central Otago vineyard still coming to maturity (planted just 4 years ago), the couple made the decision to produce a wine from bought grapes. They went on the hunt to find good organic grapes grown on interesting sites (not limiting themselves to just Central Otago) and landed on this wee number.
Here we have a 100% Sauvignon Blanc from the Cycle Road Vineyard in Waipara, North Canterbury. Organically farmed on silty clay soils with overlaying calcareous sandy gravels.
The fruit was hand picked, then whole bunch pressed after overnight skin contact. The gently pressed juice was wild fermented in mostly aged oak barrels and a small portion of stainless steel. Blended after 10 months, the wine was bottled unfiltered and unfined with just 12 mg/L sulphites.
As you would expect of Sato the wine is beautiful, clean and quite perfect. I think of the wines from Alexandre Bain as inspiration for what they have crafted. As with North Canterbury there's a fruity aromatic to the wine, which is more stonefruity than herbaceous. The palate is intense and genuinely ripe, but the acidity still taut and present. The finish is dry, saline and refreshing.
As a wine goes, it's incredibly moreish. This wine could be put in front of anyone and it will garner a smile. I bloody love it.
