2018 Sato Riesling
100% Riesling from the BioGro-certified organic Avalon Vineyard in Central Otago. Soils here are sandy loam and loess over gravels, quartz and schist.
Organically farmed, hand harvested, whole bunch pressed into stainless steel, wild fermented and then rested for 10 months before being bottled unfiltered, unfined (vegan) and with just 25mg/L sulphites added at bottling.
Dry, with no residual sugar.
