Halcyon Days 'Halcyon' (formerly Kotare) is Amy and Olly's skin-fermented Sauvignon Blanc blend.

92% Skin-fermented Sauvignon Blanc, 8% Skin-fermented Chardonnay and rosé of Pinot Noir from the Osawa (BioGro-certified organic) vineyard in Mangatahi, Hawke's Bay. The grapes were hand harvested, skin-fermented and then wild fermented in stainless steel. Just 10% alcohol, the wine is light, energetic and vibrant. It's a softer, more textural style of Sauvignon which has flavours of stonefruit and nashi pear. Fragrant, perfumed, musky.

Unfined, unfiltered, no added sulphites or additions of any kind.
