2017 Making Space
By Tom Shobbrook.
Making Space is a wine that got its name because Tom needed some space in the winery for the next year's vintage. There was a vat of Shiraz that hadn't made its way to dry just yet, so Tom bottled it and made room for things. I've you've ever seen just how small and cramped Tom's winery is, you'd understand!
Capturing the true essence of a pétillant naturel, the wine made its way to dry in the bottle, leaving it naturally sparkling, dry and truly delicious. Orange pith, grapefruit, campari, bitters, amaro, Barossa and bubbles leaves the palate tingling. One glass quickly turns into a bottle.
Serve nice and cold and see just how refreshing Shiraz can be!
NB: We offer a 20% glass pour discount on this wine to compenstate for the foam/loss found in some bottles on opening. We suggest standing upright for the lees to settle, storing as cold as possible (below 8 degrees), and having a glass ready when you open it.
